There is a wide variety of flavours and aromas, depending on the terroir, the grapes and the winemaker. They are purer wines, from small vineyards, treated in a sustainable, organic or biodynamic way, made with indigenous yeasts. Fermentations occur spontaneously and some are cloudy because they are not filtered.
