The grapes are harvested by hand, only during the morning to preserve the maximum night freshness and conserve the maximum quality. When they arrive at the winery they undergo a rigorous screening, being subjected to a soft pressing, followed by spontaneous fermentation in used and new French oak barrels of 500L and 225L. After fermentation, the wine ages for 10 months on its lees without battonage.
